Devil's Food Cake

This cake is absolutely delicious if you love chocolate and marshmallows. But one tip is the icing doesn't hold long (maybe 1 or 2 days) so you might want to save this recipe for a family dinner.


1 Devil's Food Cake Mix, (I use Duncan Hines)
1 pkg Dream Whip
1 cup water
4 eggs

Fix Dream whip as instructed on package. Set aside. Preheat oven to 350 degrees. Grease and flour 3 nine inch cake pans. Mix cake mix, water & eggs. Fold in the dream whip and pour into pans. Bake at 350 according to cake mix directions.

Icing
1 1/2 cups sugar
3/4 cup water
2 tbs. karo light syrup
2 caps vanilla flavoring
4 egg whites beaten
2 or 3 tbs. powdered sugar

Boil sugar, syrup, water & flavoring until forms semi-hard ball in cold water. Pour into beaten egg white mixture until forms peaks. Add powdered sugar & beat until marshmallowy. (You may have to use a little more than 3 tbls. of powdered sugar.) Icing the three layers and enjoy. Be sure & keep it covered after eating.

Hamburger Casserole (Britt's Ketsup Casserole)

This recipe is so easy. And it's a great way to use left over mac & cheese. My family loves it.
Ingredients
1 lb hamburger meat
3 tbs onion
ketsup
1 tsp. parsley, (more if you like it)
4 or 5 slices of american cheese

Sautee onions in a large skillet or pan. Add hamburger meat and cook until done. Add enough catsup to make it like spaghetti sauce. (You don't want it too soupy but you don't want it too dry either. Turn down on low heat and add cheese and let melt. That's it. I have also substituted the parsley with Italian seasoning and mozerella cheese instead of American. It's really good that way too. Pineapple Cream Cheese Pie

30+ years ago, I had a piece of blueberry pie at the job I worked and it was so good I wanted the recipe. Well they would not share and I have looked everywhere for this recipe all these years. And wala, I googled the other day and found it!. You have got to try this recipe. It is soooo good and soooo easy to make.
Pineapple Cream Cheese Pie

1 9" Graham Cracker Crust or baked pie shell
1 small can pineapples drained
1 tsp vanilla
2 cups powdered sugar
1/2 tsp. lemon juice
3/4 cup heavy whipping cream (I used 2 cartons)
8 oz. cream cheese

Directions
Whip whipping cream until stiff peaks. Set aside. Combine cream cheese, vanilla, sugar and lemon juice together until creamy. Gently stir in whipping cream. Then gently stir in the drained pineapples. Pour into graham cracker crust and refrigerate at least 3 - 4 hours before serving. Oh my gosh, this is sooo yummy.
You can also substitute the pineapples with a pint of rinsed and drained blueberrie or strawberries.

June recipe

This is a great, easy recipe for a 4th of July cake. It is sooo good

Angel Food Cake

Angel Food Cake, (you can make your own or buy one already made.)
Large box instant vanilla pudding
1 cup milk
1 pint vanilla ice cream soft.

Tear cake up into small chunks in a 9 X 12 pan. Mix ingredients together and pour over sponge cake. Then mix (2) 10 oz. pack frozen strawberries, thawed, 1 Large strawberry jello and 1 cup boiling water. Mix and pour over rest of ingredients. Cover with 16 oz. ox Cool Whip. Refrigerate 2 0r 3 hours or overnight. Enjoy

May recipe

Here is a recipe for a great summer salad. This is one of those salads that you can add or delete items from depending on your taste. Example, it calls for cherries but I don't like cherries so I don't put them in there. It doesn't call for grapes but I love grapes so I put them in there. So if there is something you don't like just omit it and add what you do. I love this salad.

Fruit Salad

1 cup marachino cherries
1 cup mandarine oranges, drained
1 cup pineapple tidbits, drained
1 cup coconut
1 cup chopped nuts (your prefence what kind)
1 cup colored marshmallows
1 cup sour cream (sometimes I subst. cool whip)

Just combine everything in a bow, mix together real well and chill overnight. It stays fresh for about 3 days.
If you don't want that much salad, just cut ingredients in half. When I serve it, I cut up a banana to put with it. You can't include the banana in the recipe. Enjoy!

Pasta Salad

This is one of those recipes that you add whatever you like in it. I am listing what I put in mine but you can add anything from green peppers to radishes or any other vegetable that you like in a salad. I don't recommend tomatoes, cheese, crutons or lettuce because they get mushy after a day or so. But I do add them on when I serve them.

Ingredients
Brocolli
cauliflower
carrots
onions
cucumbers
ranch dressing
shell macaroni (or regular macaroni, if you prefer)

Cook your macaroni until done. Meanwhile, wash and slice or chop your vegetables and put in a large bowl. I prefer homemade dressing, so I use the ranch original dressing package and make my own. When macaroni gets done, pour over veggies and mix well. Then add dressing, salt and pepper to taste and refrigerate for 24 hours. Serve with crutons, tomatoes and cheese and it is so yummy.

Another way to fix this is to use spaghetti noodles instead of macaroni and italian dressing. This is really good with italian dishes. Hope you enjoy.

April recipe

I love burritoes so I came up with my own version and want to share it with you. My family loves it

My version of Burritos

1 box burrito mix
hamburger meat
1 large can Bush's Chili Beans
Shredded mild cheddar cheese

This is one of those recipes that you have to just know how much meat to fix for your family. I use 3 to 4 lbs for a large casserole dish full of burritos. I also purchase extra tortillas to make enough. So if you are just fixing a few, use the amount in the box. If you are fixing for a large family, purchase extra tortillas.
First brown your hamburger meat in a large pan. Add the seasoning mix in the box and water that it calls for. Then blend your chili beans, (I use mild. If you like it hot, use hot) in a blender until fine. Add this to the hamburger mixture. Stir until blended. Next, put a large tbsp. of meat in your burrito, roll it up and place it in your casserole dish. Keep doing this until you have enough burritos for your family. Then pour the rest of the mixture over your burritos. Top with chedder cheese and bake at 350 for about 20 - 30 min, until cheese is melted.
Toss a salad and wala, you have an easy, yummy meal.
I hope you realize you need extra meat sauce to pour over the burritos. That's why I use 3 - 4 lbs. of hamburger meat.
If you can't find the burrito box, just purchase taco seasoning and tortillas.

March recipe

You can tell by now that I love chocolate.LOL This cake is a little expensive but it is sooo good, especially if you love marshmallows.

Devil's Food Cake

Devil's Food cake mix
1 pkg. dream whip
4 eggs
1 cup water

Icing
1 1/2 cups sugar
3/4 cup water
2 tbs. Karo light syrup
2 caps vanilla flavoring
4 egg whites beaten
2 or 3 tbs. powdered sugar

Grease and flour 3- 9in. cake pans Fix dream whip as directed on package. Mix cake mix, water and eggs. Gently blend in dream whip and pour in 3 cake pans. Bake at 350 degrees according to time on cake mix box.

Icing
Boil sugar, syrup, water and flavoring until forms simi-hard ball. Meantime, beat your egg whites until fluffy. Gradually add your syrup mixture to egg whites and beat until stiff. Add powdered sugar until marshmallowy. I generally have to use 4 or five tbs. powdered sugar. Serve warm.

Sorry I am late on this recipe but it is worth the wait. This is soooo yummy!

German Chocolate Upside Down Cake

1 package Duncan Hines German Chocolate Cake mix
1 cup pecan chips (I use 2 small packs)
1 cup coconut firmly packed
1 8oz pkg. cream cheese, softened
1 box powdered sugar (4 cups)
1 stick melted butter

Grease & flour 9 X 13 in cake pan. Pour the pecans in bottom of pan. Then layer the coconut on top of nuts. Mix cake mix as directed on box and pour over pecans and coconut. Mix cream chees, powdered sugar and butter. Spread over cake mix. Bake at 350 degrees for 45min to 1 hour. (It takes an hour in my oven). You want the cake done but the cream cheese is soft. That's it. Cool and serve. I refrigerate mine after serving and warm in microwave when I want another slice. Hope you enjoy.

January's recipe (Homemade Banana Pudding

Homemade Banana pudding

1 cup sugar
1/2 cup flour
3 eggs divided
3 cups milk
1 tsp vanilla
1 box vanilla wafers
1 stick butter

Combine sugar and flour. Gradually add milk. Separate eggs and add egg yolks to mixture. Boil in double boiler on med/high heat (I use wrought iron skillet under pan) until thick . Add butter and continue cooking until mixture is thick as pudding. Take off heat and add vanilla flavoring. Make a layer in an oven proof bowl of 1 banana and then vanilla wafers. Add enough of pudding to cover. Add second layer of banana and wafers, then pour enough pudding to cover. Do this one more time and place wafers on top of pudding. Blend egg whites in mixer until it forms peaks, then add 2 1/2 tbs sugar and continue beating until stiff peaks. Place on top of pudding, put in oven and bake at 375 degrees until brown, about 10 min. Serve warm.
