Pasta Salad

This is one of those recipes that you add whatever you like in it. I am listing what I put in mine but you can add anything from green peppers to radishes or any other vegetable that you like in a salad. I don't recommend tomatoes, cheese, crutons or lettuce because they get mushy after a day or so. But I do add them on when I serve them.

Ingredients
Brocolli
cauliflower
carrots
onions
cucumbers
ranch dressing
shell macaroni (or regular macaroni, if you prefer)

Cook your macaroni until done. Meanwhile, wash and slice or chop your vegetables and put in a large bowl. I prefer homemade dressing, so I use the ranch original dressing package and make my own. When macaroni gets done, pour over veggies and mix well. Then add dressing, salt and pepper to taste and refrigerate for 24 hours. Serve with crutons, tomatoes and cheese and it is so yummy.

Another way to fix this is to use spaghetti noodles instead of macaroni and italian dressing. This is really good with italian dishes. Hope you enjoy.

April recipe

I love burritoes so I came up with my own version and want to share it with you. My family loves it

My version of Burritos

1 box burrito mix
hamburger meat
1 large can Bush's Chili Beans
Shredded mild cheddar cheese

This is one of those recipes that you have to just know how much meat to fix for your family. I use 3 to 4 lbs for a large casserole dish full of burritos. I also purchase extra tortillas to make enough. So if you are just fixing a few, use the amount in the box. If you are fixing for a large family, purchase extra tortillas.
First brown your hamburger meat in a large pan. Add the seasoning mix in the box and water that it calls for. Then blend your chili beans, (I use mild. If you like it hot, use hot) in a blender until fine. Add this to the hamburger mixture. Stir until blended. Next, put a large tbsp. of meat in your burrito, roll it up and place it in your casserole dish. Keep doing this until you have enough burritos for your family. Then pour the rest of the mixture over your burritos. Top with chedder cheese and bake at 350 for about 20 - 30 min, until cheese is melted.
Toss a salad and wala, you have an easy, yummy meal.
I hope you realize you need extra meat sauce to pour over the burritos. That's why I use 3 - 4 lbs. of hamburger meat.
If you can't find the burrito box, just purchase taco seasoning and tortillas.

March recipe

You can tell by now that I love chocolate.LOL This cake is a little expensive but it is sooo good, especially if you love marshmallows.

Devil's Food Cake

Devil's Food cake mix
1 pkg. dream whip
4 eggs
1 cup water

Icing
1 1/2 cups sugar
3/4 cup water
2 tbs. Karo light syrup
2 caps vanilla flavoring
4 egg whites beaten
2 or 3 tbs. powdered sugar

Grease and flour 3- 9in. cake pans Fix dream whip as directed on package. Mix cake mix, water and eggs. Gently blend in dream whip and pour in 3 cake pans. Bake at 350 degrees according to time on cake mix box.

Icing
Boil sugar, syrup, water and flavoring until forms simi-hard ball. Meantime, beat your egg whites until fluffy. Gradually add your syrup mixture to egg whites and beat until stiff. Add powdered sugar until marshmallowy. I generally have to use 4 or five tbs. powdered sugar. Serve warm.

Sorry I am late on this recipe but it is worth the wait. This is soooo yummy!

German Chocolate Upside Down Cake

1 package Duncan Hines German Chocolate Cake mix
1 cup pecan chips (I use 2 small packs)
1 cup coconut firmly packed
1 8oz pkg. cream cheese, softened
1 box powdered sugar (4 cups)
1 stick melted butter

Grease & flour 9 X 13 in cake pan. Pour the pecans in bottom of pan. Then layer the coconut on top of nuts. Mix cake mix as directed on box and pour over pecans and coconut. Mix cream chees, powdered sugar and butter. Spread over cake mix. Bake at 350 degrees for 45min to 1 hour. (It takes an hour in my oven). You want the cake done but the cream cheese is soft. That's it. Cool and serve. I refrigerate mine after serving and warm in microwave when I want another slice. Hope you enjoy.

January's recipe (Homemade Banana Pudding

Homemade Banana pudding

1 cup sugar
1/2 cup flour
3 eggs divided
3 cups milk
1 tsp vanilla
1 box vanilla wafers
1 stick butter

Combine sugar and flour. Gradually add milk. Separate eggs and add egg yolks to mixture. Boil in double boiler on med/high heat (I use wrought iron skillet under pan) until thick . Add butter and continue cooking until mixture is thick as pudding. Take off heat and add vanilla flavoring. Make a layer in an oven proof bowl of 1 banana and then vanilla wafers. Add enough of pudding to cover. Add second layer of banana and wafers, then pour enough pudding to cover. Do this one more time and place wafers on top of pudding. Blend egg whites in mixer until it forms peaks, then add 2 1/2 tbs sugar and continue beating until stiff peaks. Place on top of pudding, put in oven and bake at 375 degrees until brown, about 10 min. Serve warm.
